To do this, go into the Settings app on your iPhone, select Notifications, and then select the specific app for which you want to turn off CarPlay notifications — Calendar, FaceTime, Messages, Phone, or Reminders — and you should see a Show in CarPlay setting below the lock screen setting.
Siri describes emoji characters when reading incoming iMessages and texts. But writing with the emoji keyboard is a different story. When dictating messages to Siri, emojis cannot be used. Emojis are on their own, separate iOS keyboard.
Go to Settings > Bluetooth > Your Car > tap the little circle with the i in it. Turn on Show Notifications. Go to Settings > Bluetooth > Your Car > tap the little circle with the i in it. Turn on Show Notifications.

If you want to quickly enable Do Not Disturb mode, simply swipe down from the top of your screen to open the notification shade and select the Do Not Disturb icon. With this feature turned on, Siri reads your incoming messages out loud when your headphones are connected to your iPhone or iPad, you're wearing them, and your device is locked. In Settings > Notifications > Announce Messages with Siri, you can also manage which contacts Siri reads messages from.
Open the Settings menu on your iPhone. Tap Notifications (it's weird Apple didn't put this under Siri and Search, but maybe that will change.) There's also an option to “Send replies without confirmation,” which means you can speak a text message back to someone and Siri won't read it back to you before sending it.

So the answer to my original question of "will CarPlay work without Siri?" is a most definite NO! But if you have an iPhone 4s or newer it should most certainly work with your CarPlay! Siri has been featured on all iPhones since the iPhone 4S.

If you're having issues connecting with CarPlay, remove the Bluetooth connection between your iPhone and vehicle. Restart your iPhone and try to use CarPlay again. Go to Settings > General > CarPlay to see if you have any other CarPlay connections with another vehicle. Try deleting these to see if it fixes the problem.
Turn on the Speak Screen option. Then open Safari and surf to a web page. Once you're on the page you want Siri to read, swipe down from the status bar using two fingers and a Speak Screen box will pop up, and Siri will automatically start reading you the webpage — ads and all.
If you don't see the dialog, or want to change your settings, you can enable Announce Messages with Siri later in Settings.

And yes, that means Siri will quite literally read aloud whatever is open and on the display of an iOS device, whether it's a web page, an article, an email, a text message, anything on the screen will be read out loud by Siri, and you'll even have controls for speeding up and slowing down speech, as well as pausing
You can allow Siri access from locked screen by going to Settings -> General -> Touch ID and Password. Then, there's a section for "ALLOW ACCESS WHEN LOCKED" Make sure Siri is enabled.
Use Siri's voice to listen to Kindle books on iOS. As alternatives, you can use screen readers on Android and iOS devices. On Android, screen readers have limited functionality which only lets it read out content on the current screen. It will just read the contents of the page and stop.
