You can't uninstall the Google Assistant, but you can disable it:
- On your Android phone or tablet, touch and hold the Home button or say "Ok Google."
- At the top right, tap Explore More Settings Assistant.
- Under "Assistant devices," select your phone or tablet.
- Turn off Google Assistant.
Open the Google app > Tap on the "More" icon bottom right of the screen > Settings > Under the Google Assistant subheading tap on Settings > Phone > then switch the Google Assistant off. I have tried this and it is still popping up. Google please help and remove the useless assistant.

Is Google Always Listening on Android? Even if you don't have the OK Google hotword enabled, you can still use voice commands (which Google records too). Tapping the microphone icon on the search bar or holding the Home button to open Google Assistant will both immediately prompt you for a voice command.
Here's how to stop that:
- Login to Google's "My Activity" page (all your web activity, basically)
- Tap filter by "Date & Product"
- Tap "Deselect All"
- Tap "Voice & Audio"
- Tap "Apply"
- Tap on "Voice and Audio" above whatever file you want to listen to.
- Tap "View recording" and play.
How to stop your Google Home from listening to you by changing its settings
- Start the Google Home app on your iPhone or Android.
- Tap your account avatar at the top-right of the screen.
- In the pop-up window, tap "Assistant settings."
- Tap "Your data in the Assistant."
- In the "Voice and audio recordings" section, tap "On."
All the time? Well, no. But Google does listen to and store your voice records after you've hit the Voice Search button. Google has a dedicated page were you can listen to all the voice searches you've ever performed.
To turn Google Voice off:
- On your computer, open Google Voice.
- Click on the Menu in the top left corner (icon with three lines)
- Click Legacy Google Voice.
- Click on Settings at the top right > Settings.
- Click the Phones tab.
- Under your forwarding phone, click Deactivate Google voicemail on this phone.
On an Android phone to disable speech to text:
- Go to settings.
- Go to language and input.
- Go to Virtual Keyboards.
- Go to Manage Keyboards.
- Deselect Google Voice Typing.
If you have the Google+ Android app, disable or delete it
Google reveals on a support page that the Google+ app can't be deleted on some Android devices, but they can be disabled on all Android devices.Google+ is being phased out due to “low usage” and because it turned into something of a security liability for Google; the company has disclosed two significant data leaks that could have exposed information for tens of millions of Google+ users to outside developers.
To check if you have a Google Plus account, first you must be signed into Google. Once signed in, go to either the Google homepage or your Gmail account. At the top right of the page, click on your profile picture. Clicking on the Google Plus account link will take you to your Google Plus page.
All Android users will need to update to this Google+ Android app immediately to continue using the app. Users can still use Google+ on their mobile web browser at plus.google.com. Note however that on April 2, 2019, we are shutting down the consumer (personal) version of Google+.

You can uninstall every Google app on your device and run your Android OS completely devoid of any Google app. There is a development project known as MicroG that does exactly that — it uses substitute and replacement apps to take over the functions (such as location) that were normally governed by GMS.
The only way to delete your YouTube account is to delete the Google+ profile associated with it. Deleting your Google+ account will not affect other Google products such as Gmail or Drive. Your emails and stored files will not be deleted.
How to delete your Google Plus account
- Open Gmail and login using your credentials.
- Click on your profile picture at the top-right corner of the screen.
- It will redirect you to your Google+ profile page.
- Now, click on the 'Settings' option from the left column.
- Scroll down and look for the option 'Delete your Google+ profile' under the 'Accounts' section.
