Nearly all of the new pound coins in circulation at the moment carry the date of 2016 because the Royal Mint made over half a billion so there would be enough for the launch in March. That means there are about eight new coins for every person in the UK, so the 2016 pounds are not rare at all.
Banks don't legally have to accept old paper notes and coins once they've been withdrawn from circulation. However, some may continue to allow you to swap them while others may let you deposit old notes and coins into your account.
According to the blog ChangeChecker, the rarest one pound coin currently in circulation is the Edinburgh £1. The coin was part of a series depicting the four capital cities of the UK and is the only £1 coin with a mintage below one million.

While the paper £5 and £10 notes are no longer legal tender, they will always be accepted by the Bank of England. People can take or post any old notes to the bank in Threadneedle Street, in the City of London, to be exchanged for a new-style polymer one.
