A pinch of baking soda makes a world ofdifference in a pitcher of freshly brewed sweet tea. Itneutralizes the tannins in black tea, giving it a smoothertaste. (This same trick works to take the bitterness out of otherteas as well; you can add a teeny pinch to a mug ofhot tea while steeping.)
Hot-Brewed: Bring 8 cups water to a simmer;remove from the heat and add 3 tablespoons loose tea or 6tea bags.
Put 4 to 8 tea bags into a clean 2 quart orgallon glass container (4 teabags for a 2 quart container, 8tea bags for a gallon container). Fill with water and cap.Place outside where the sunlight can strike the container for about3 to 5 hours. Move the container if necessary to keep it in thesun.
Instructions
- Boil cold filtered water and pour halfway into tea pot andteacups to warm them up.
- Set the correct water temperature for your tea.
- Put 2 heaping teaspoons of tea (whole leaf tea is best) intotea pot.

"Steep" essentially means soak
In the most basic sense, to steep somethingmeans to soak it, which is what we do when we preparetea. We take dry tea leaves, add them to hot water,let them soak, pour out the tea and then drink it. Here's how I like to make cold-brew iced tea:
- Place 5 tablespoons loose tea or 10 teabags in a glass orplastic 4- to 8-cup container.
- Cover the teabags with (at least) 4 cups cold—preferablyfiltered—water.
- Cover the container and chill for at least 4 hours (or up to48)
- While the tea is chilling, make simple syrup.
How to Brew
- Put in 2 teaspoons of loose tea or 2 tea bags for every cup (8oz) of tea.

Sun tea is just that: tea brewed insunlight instead of with pre-boiled water. While making suntea feels very homesteady, like baking your own bread orgrowing herbs, it should only be done safely, and with the rightequipment.
Boil 4 cups water. Make a tea bag using abasket coffee filter and clothespin. Use 1/4 – 1/2 cuploose herbs or tea leaves per gallon offinished tea. Put tea bag and hot water into a halfgallon jar.
