Size. Rib-eye steaks can range from 8 ounces to several pounds in weight, depending on how thickly they are cut. A typical restaurant cut is a 1-inch thick steak, which will usually weigh between 16 and 20 ounces.

To reap the most benefit from the rib cap itself, buy the anterior end of the rib roast, cut specifically from up by rib 5. Then you can remove the rib cap later and cook it separately. When you remove it, keep in mind that there's a pretty thick vein of fat between the cap and the eye.
T-bone steaks aren't quite as fatty, whereas Ribeye has a higher fat content. T-bone steaks have more bang for their buck – they're pretty big and are often quite affordable, whereas Ribeye steaks are a bit more expensive.
Ribeye is More ExpensiveThe tenderness and marbling on a ribeye lends itself to being marketed as a premium steak. As such, ribeye steaks almost always cost more than a sirloin. At my grocery stores the choice grade Angus steaks a ribeye is $10 per pound compared to $6 per pound for the sirloin.
You'll likely find that the New York strip is slightly more expensive than the ribeye. They both look very similar, but the New York strip is a higher quality cut. It's a healthier steak when taking into account the fat content. It can be chewier, but some people also like the flavor better.
