Both companies are of pretty good quality. Go Sachs if you want to save money since they are a bit cheaper than bilstein shocks. Yes, bilstein is a little bit stiffer but they also reduce body roll. Also, if you get the Bilstein HD, the ride quality should improve a little bit.
Bilstein's technically superior, patented monotube gas charged design allows the excessive heat from the oil to transfer to the outer surface of the shock body and dissipate more efficiently. The dividing piston also permits the oil to expand as heat builds, preventing aeration (foaming) and viscosity loss.

Product review. The Bilstein B6 4600 is a perfect blend of performance and comfort. It is the best shock absorber for passenger cars, from minivans to Mercedes Benz, Ferraris or Porsche. It also enhances the control and handling performance of your vehicle.
These shocks are a great way to go. Way better than spacers, they mess with the suspension travel, these shocks don't. I definitely recommend these shocks with or without the adjustable kit and stiffer springs that I needed.
If you garage it most of the time and are mostly highway driving, no towing, and drive like a grandpa/grandma, then 100K seems quite reasonable. I have about 20K on my 5100s and they feel as good as when I installed them. I'd expect them to last at least 75K.

The adjustable 5100 fronts have a groove in the shock where a ring sits in. Then your perch rests on top of that. Spring is then compressed on top of that. You will have to completely disassemble the shock then reinstall everything after changing the height setting.
I did notice a firmer ride when I installed my shocks but it definitely isn't to stiff. Also not sure if you have had the truck aligned or not but that can also cause a harsher ride. The way the shocks operate and the way they achieve their lift is explained on the Bilstein website.
Keep in mind though, the warranty isn't necessarily void just because you changed the shocks, but just because the ones you picked raised the front. A stock reacement shock for exame would not void your warranty on related components.
