When Belle's father stole his rose, he agrees to give him a second chance by accepting that he brings one of his daughters. Being transformed in a Beast could bring frustration and make him cruel, yet he shows kindness to people.
As a result, Gaston knocks Maurice out, ties him in a tree, and leaves him to die at the hands of the wolves, but he is rescued by Agathe, the disguised Enchantress, and brought back to town, where he tries to prove Gaston tried to murder him.
In the novel, the Enchantress is revealed over the course of the plot to be Belle's mother, Rosalind, with flashbacks exploring her history with Maurice prior to Belle's birth, before she is captured by Monsieur D'Arque as part of his campaign against magic after she cast the curse on the castle.
The Beast runs to be reunited with Belle but he is stabbed in the back by Gaston. Belle doesn't recognize him at first but soon looks into his eyes and knows her true love. They embrace as all of the servants are transformed back into their human forms, rejoicing that the spell has been broken.

During the movie, we find out all the petals have nearly fallen off the rose, and the curse has been in place for 10 years. This makes sense if the Beast is nearly 21 - and was thus cursed when he was 10-11 years old.
While a very good interpretation of the story, I'd like to point out that the Beast's initial motive for having Belle around is to break the spell. He and the servants discuss this in detail while they wait for her to arrive for the first dinner on the first night.

The Beast can readOnce she finishes, she asks him to read it, and he confesses he never really learned how to read. This is not the case in the remake. The Beast loves reading just as much as Belle does, enough to mock her for her love of Romeo and Juliet.
While the Beast and his servants still transform back into their former human selves, the entire process is a bit different from what fans of the 1991 animated feature may remember. In the animated movie, Belle proclaims her love for the Beast as the final rose petal falls from the flower.
