In Commonwealth countries, poussin (pronounced /ˈpuːsæn/ and less commonly called coquelet) is a butcher's term for a young chicken, less than 28 days old at slaughter and usually weighing 400–450 grams (14–16 oz) but not above 750 grams (26 oz). Normally a portion is a whole poussin per person.

The biggest difference between the two small chickens is that the Cornish hen, or Cornish Rock hen, Rock Cornish hen, Cornish game hen, or any variation of that name, is a hybrid of two specific breeds. The poussin (also called a Spring chicken or squab broiler) does not have a specific breed.
Cornish game hen (also Rock Cornish game hen) is the USDA-approved name for variety of broiler chicken, produced from a cross between the Cornish and White Plymouth Rock chicken breeds, that is served young and immature, weighing no more than two pounds (900 g) ready to cook.
