Sheep milk is more acceptable to the human digestive system in comparison to cow's and goat's milk. Sheep milk does not have such a strong smell or taste as is often the case with goat's milk. Sheep milk is the most nutritious milk on sale in the world today.
Goat and sheep's milk also contain the more easily digestible A2 beta-casein, which is a big part of the reason they're less likely to cause gastrointestinal symptoms and inflammatory responses when consumed.
Cow's milk may be used in the feeding of lambs when available. One source might be from treated cows. Alternatively, milk from treated dairy goats or milk sheep may be used for these animals. One caution is that cow's and goat's milk are both lower in fat (energy).
The high butterfat content in sheep's milk means sheep's milk cheese is buttery and rich. Other typical flavors of sheep's milk cheese are nutty and (in younger cheeses) gamy.
In general, milks from Guernsey, Jersey, Asian herds, human milk, and others (sheep, goat, donkeys, yaks, camel, buffalo, sheep, etc.) contain mostly A2 beta casein. Most milk contains a mixture of these proteins. Approximately 60 percent of the beta casein is A2, and 40 percent is A1.

Sheep milk contains about one third more energy than cow or goat milk (making it a favourite of high-performance athletes). It has double the protein and much more of the right kinds of fats, vitamins and minerals, particularly calcium, iron, magnesium, phosphorus and zinc, while being lower in sodium.
The most common variants among Western cattle are A1, A2, and B. In general, milks from Guernsey, Jersey, Asian herds, human milk, and others (sheep, goat, donkeys, yaks, camel, buffalo, sheep, etc.) contain mostly A2 beta casein. Milks from Holstein Friesian contain mostly A1 beta casein.
While it is possible for lambs to survive without colostrum in a relatively disease-free environment, the likelihood of disease and death is much higher in lambs that do not receive colostrum. Young ewes generally produce less colostrum because they also produce less milk.
Mare milk is a milk secreted by female horses, known as mares, during lactation to feed their foals. Mare milk is used in Europe as an alternative for cow milk because of its purported health benefits. While still a niche product, mare milk is considered a remedy for skin or digestive problems.
Sheep Milk Production: The average lactation period for a dairy breed of sheep can be up to 240 or around 8 months. Most dairy sheep farmers will milk each ewe for about 6 months which is about 180 days of lactation. A non-dairy ewe can have lactation periods from 90-150 days.

After mating, sheep have a gestation period of around five months. Within a few days of the impending birth, ewes begin to behave differently. They may lie down and stand erratically, paw the ground, or otherwise act out of sync with normal flock patterns. An ewe's udder will quickly fill out, and her vulva will swell.

Sheep's milk is significantly higher in milk solids (fat and protein) and contains roughly double the amount of fat of with cow or goat milk. Like goat's milk, it is naturally homogenised and has smaller fat globules and more medium fatty chain acids. Sheep's milk is also high in A2 protein, Vitamin B12 and folate.
Brie (/briː/; French: [b?i]) is a soft cow's-milk cheese named after Brie, the French region from which it originated (roughly corresponding to the modern département of Seine-et-Marne). It is pale in color with a slight grayish tinge under a rind of white mould.
Feta cheese is a brined curd cheese made from Sheep's milk. Originally hailing from Greece, Feta is Greek means "slice", Feta is packaged and sold in blocks. Traditionally and legally within Europe, feta is produced using only whole sheep's milk, or a blend of sheep's and goat's and sometimes cow's milk.
Production: Parmigiano reggiano is made from cow's milk and is aged a minimum of 12 months (two- and even three-year versions are available at some cheese shops). Pecorino Romano is made from sheep's milk and is aged a minimum of five months (and up to eight).
