Both have they're quirks but Airbus is slightly more automated than boeing, making it easier but less interactive. Due to the way the sim's trim works with our input devices, I would say that Airbus (or Fly-By-Wire Boeings) are easier to fly. In real life, it's a wash as trim works a little different in real life.
