Fuji is not a prestigious brand but they make great bikes, especially for the price. Only thing is that is a 26 inch wheels. Most have moved on to 27.5 and 29ers. That's a pretty good xc bike!

You can get a great Giant, Specialized, Fuji whatever and probably for a lower price. But yes, to answer directly, Trek builds a good quality bike. Trek outsources some of their frame manufacturing, however the designs are Trek's and the QC is supervised by Trek itself.

If you'll stay on pavement and ride primarily for exercise, a road bike or fitness bike is a good choice. A comfort or cruiser bike is better for short, casual rides with family. If you'll bike mostly for commuting, a city bike might be best; think about electric pedal-assist models as well.
Giant gives you the most bang for the buck in the lower and mid-range. Specialized is more active in the high-end bike market. Go for a Giant if you want to spend between $800 and $2,000, go for a Specialized bike if you have $5,000 or more to spend. That's my conclusion but it's a bit generic.

A hardtail is much better for jumps. The technique should be the same except you don't have to force the bike over the jump as much as you would with a full suspension frame due to the suck it gets off a takeoff.
