2 strands chunky = 1 strand super chunky.
What is super chunky yarn? Super bulky (USA) yarns are usually put in together with super chunky in the UK. In Australia this is known as 14 ply yarn weight.
Super bulky yarn (weight classification 6) is worked on needles larger than 11US (8 mm) and gives an average gauge of 6 to 11 stitches per 4 inches. Jumbo yarn can be worked on needles size 17 US (11 mm) and up or with your arms. The gauge is 6 or fewer stitches per 4 inches.
8/2 is a 2 ply, 8/4 is a 4 ply and 8/8 is an 8 ply. They get progressively fatter and therefore have less yardage per pound.

You can double strand DK yarn and it should knit up to a chunky/bulky gauge. Though by the gauge, that chunky yarn sounds more like a worsted weight, aran weight at best.
The most popular type of yarn for a chunky blanket is merino wool yarn. This natural fiber is soft, bouncy and perfectly ideal for a warm and cozy blanket. In addition, oversized acrylic yarn can sometimes be ideal for these types of projects too.
Chunky Yarns These yarns are thicker than worsted and knit to a gauge of 3-3.75 stitches per inch on a size U.S. 9-11 needle. Bulky Yarns These yarns are larger yet than aran or chunky. They are worked on large needles with a US size of 11 or greater.
Group "B" - Medium Weight is comparable to today's standard yarn weight Light. Yarns in this weight include: DK and light worsted. Recommended needle sizes for vintage yarn weight "medium weight" are 5, 6, or 7.

Yarn weight refers to the thickness of the yarn. It's a range, from super fine to super bulky. There are six different categories of yarn weights, and according to the Craft Yarn Council, specific weights of yarn should produce a somewhat predictable number of stitches when using a particular-sized needle.
*2 strands of a lighter worsted yarn (e.g. Wool-Ease or Fishermen's Wool) held together may approximate the thickness of a chunky yarn, while 2 strands of a heavier worsted weight yarn (e.g. Vanna's Choice) held together may approximate the thickness of a super bulky yarn.

In North America, yarns are often referred to by their descriptive names, like a “worsted yarn” instead of a “number four yarn.” Under this system, worsted yarn is considered a medium weight number four yarn with a knitting gauge of 16-20 stitches for every four inches of knitting.
Double knitting yarn is also known as DK yarn, 8 ply yarn or light worsted weight yarn. It is assigned a 3 which is lightweight yarn as per the Craft Yarn Council ratings and the standard gauge is 21-26 stitches per 4”.
