It isn't a true thing that GRE test is specifically easy in January than all other months because GRE test is conducted and designed by ETS on a regular basis. The reason for it is that GRE test is conducted almost on a daily basis in different parts of world.
Considering that it takes nearly 2-2.5 months to produce a perfect application, the ideal time to take GRE is during April-May. By the time you are ready to take your test, you must also shortlist 4 schools to whom you can send your GRE scores as part of your ETS exam fee.
In either case, your preparation period should be deadline-driven. For example, if your application is due in the beginning of December, you must take the GRE in November at the absolute latest. Nearly all applicants are already within the top 10% of their college or university. The bare minimum for grad school is a 3.0 undergraduate GPA (but most have higher than 3.3), and in the humanities, many of the applicants come in with a 3.9 GPA or higher.
When to apply

I personally prefer taking exams in the morning and getting them out of the way. The GRE is a long exam (almost 4 hours), so be prepared to sit for a while. Afternoon exams might be more your thing, but to me, I would have been too nervous for the entire morning. It would also feel like my morning was wasted.

Although many GRE practice tests can be taken online, the actual exam itself must be taken in an official testing center. Taking the GRE under the guidance of an administrator in one of these testing centers helps ensure the integrity of the test results.
An advantage of applying during the fall intake is that there is comparatively a higher number of courses offered by a university as the number of applicants is higher during the fall semester. In spring, there are comparatively fewer students applying, and so the courses offered by the universities are also fewer.
