When you use boxed cake mix to make a large cake, you will double both the mix as well as the amounts of all ingredients listed in the directions on the box and adjust the baking time accordingly. This little bit of extra effort will be well worth it when you serve the cake and all your guests can enjoy it.
The fine folks at Chow have this easy tip to help you transport frosted cakes safely without messing up the frosting. Just add a few toothpicks (wooden skewers would work as well) around the top of the cake pointing out away from it, and put a layer of plastic wrap over the toothpicks to cover the cake.
Instructions
- The only directions to note are that whatever the back of the box directs you to use, you have to:
- Add an additional egg.
- Replace the water with milk, same amounts.
- Replace the oil with melted butter. DOUBLE the amount.
- Cook with the same directions that are printed on the box.

Sheet PansThe sheet pan closest to the right size for two boxes of cake mix is the common 9-inch-by-13-inch size. It's the right size for 10 cups of batter, which would bake for roughly 45 minutes at 350F.
Weigh the bowl that the cake batter is going to be in while empty, and then weigh it again with the cake batter in it. Subtract the bowl's weight from this number and you've got exactly how much the batter weighs. Then you just have to divide the cake batter's weight into the number of cake pans you're using.
Baking pans to useI have them in all four sizes- but when you stack a cake you need multiples of the same size pan. So that means 3 8″ round cake pans and 3 6″ round cake pans.
Do you need all of these? If you don't bake cakes very often, probably not. But if you love baking layer cakes, I'd recommend all three sizes. 9-inch round pans are probably the most commonly called for pan to be used in a cake recipe.
Most bakeries do NOT bake from scratch. In fact, I once worked at a bakery that actually claimed to be a “scratch bakery”, but all their cakes started with a Duncan Hines cake mix, the same kind you buy in the grocery store.
add one more egg (or add two additional if you want it to be really rich) double the oil amount, but use melted butter instead of oil use milk instead of water add 1 tsp of real vanilla.
Add the amount of eggs called for in the recipe but add two extra egg yolks. The extra yolks add the density and moisture you'd find in a bakery cake! Milk: Add MILK, not water, when your box mix calls for liquid. The milk adds density, fat and, most importantly, extra flavor to your mix.
I promise you SOFT & MOIST cakes!
- Use Cake Flour. Reach for cake flour instead of all-purpose flour.
- Add Sour Cream.
- Room Temperature Butter / Don't Over-Cream.
- Add a Touch of Baking Powder or Baking Soda.
- Add Oil.
- Don't Over-Mix.
- Don't Over-Bake.
- Brush With Simple Syrup/Other Liquid.
Add a dollop of sour cream for a bakery-style cake.Per baking blog Liv for Cake, you may want to start by adding about 1 cup of sour cream.
Your cake is too denseA cake that is overly dense typically has too much liquid, too much sugar or too little leavening (not excess flour, as is commonly thought). A cake that bakes too slowly takes longer to set and may fall, causing a dense texture.
