They will be exactly the same (in this regard). If it's actually running at 144hz then it should look like any other 144hz out there. It might run a little cooler and extend the lifespan too.
If it is anything like WoW now, or WoW 10 years ago, it wont be getting remotely near 144 fps anyway, 75z is plenty for slower-paced games. A 75Hz ultrawide is pretty great for MMOs, though.
Depends on screen size. 1080p is probably fine for 20-21.5", but for 24" and up I wholeheartedly recommend 2560x1440. At those sizes, 1080p looks horrible due to the low PPI.
